Best Bruschetta Recipe Ever – Tomato Basil Mozzarella

 

BRUSCHETTA

“MAKE IT” !!!



BRUSCHETTA 


INGREDIENTS :

TOMATOES

  • 1/4 c. 

    extra-virgin olive oil

  • 2 

    cloves garlic, thinly sliced

  • 4 

    large tomatoes, finely chopped

  • Kosher salt 

  • 1/4 c. 

    thinly sliced fresh basil

  • 2 Tbsp. 

    balsamic vinegar 

  • Pinch of crushed red pepper flakes

BREAD & ASSEMBLY

  • 1 

    large baguette, sliced 1/4″ thick on the bias

  • Extra-virgin olive oil, for brushing

  • 2 

    cloves garlic, halved


    1. Step 1In a medium skillet over medium-low heat, heat oil. Add garlic and cook, stirring occasionally, until lightly golden, 2 to 4 minutes. Let cool.
    2. Step 2Meanwhile, set a large strainer or colander over a bowl. Add tomatoes and toss with 1/2 teaspoon salt.
    3. Step 3Let sit 5 minutes. Transfer tomatoes to a large bowl. Add basil, vinegar, crushed red pepper flakes, and 1/2 tsp. salt and toss to combine. Add garlic and oil from skillet and toss again to combine. Let marinate at least 30 minutes or up to 2 days
  • BREAD & ASSEMBLY

    1. Step 1Preheat oven to 400°. Brush bread on both sides with oil and arrange on large baking sheet.  
    2. Step 2Toast bread, turning halfway through, until dried and golden brown, 10 to 15 minutes. Let cool 5 minutes, then rub one side of bread with halved garlic cloves.
    3. Step 3Arrange bread on a platter,  spoon tomatoes on garlic-rubbed side of bread just before serving . 






BRUSCHETTA

BRUSCHETTA al CAPRESE


1. To make Bruschetta al Caprese, just get some good fresh Mozzarella, and cut it into 1/4″ cubes. Mak the above recipe.


2.  Just before serving, add the diced Mozzarella to the Tomato mixture and gently mix.

Top the toasted bread with Tomato, Basil, & Mozzarella, and serve.






SHRIMP & TOMATO BRUSCHETTA


Make the above recipe for Tomato Basil Bruschetta.

Cook a 1/2 pound of cleaned shrimp, either by poaching, grilling or sauteing.

After cooking the Shrimp, cut in half down the middle.

Follow all the steps of the Tomato Bruschetta recipe. Once you have place the

Tomatoes on top of the Toasted Bread, add 1 or two pieces of Shrimp to each

Bruschetta. Serve and Enjoy.

If you’re just beginning to learn Italian cooking – or you’re advanced…..you’ll find at least ONE recipe in this book you’ll have to try. But more likely, you’ll find several. What I love about this selection of recipes is that they include strictly Italian; Sicilian; and Italian-American dishes. The author recognizes Italian-American as a cuisine unto its own. Falling into all three categories myself, I have a large collection of Italian and Sicilian cookbooks, but none specifically for Italian-American. I think this is about as close as I’ll get. Dishes from my childhood (along with some charming anecdotes from the author) are in here and my mouth waters just thinking about which one I’ll make first.


The recipes are rather simple just like *real* Italian food. I remember the time I asked Zia Elena for her spaghetti sauce and meatball recipes. To me, she was the Queen of authentic and delicious Sicilian/Neopolitan cookery (she married one of those northern Italians, so learned to cook for him. I had to ask her on the sly as no one would admit to her superior culinary skills in front of their own mothers!) Her list of ingredients was short and of course, delicious. Most Italian recipes are like that —- not complicated, but delicious.

I give this book two paws up! For the price, it’s such a deal, it should be in any cook book collection which focuses on the three types of Italian food. And lest the reader say, “But I thought Sicilians *were* Italians…” You can read up on this on the internet and see that Sicily had hosted numerous types of colonies for hundreds of years by everyone from Greeks, Arabs, Byzantines, even Scandinavians!. It only became part of Italy in 1860. Then in 1946 it became an autonomous region. Why does this matter? Sicilian cooking has many influences and so differs, although at times in subtle ways and sometimes in a complete composition expression to the more northern Italian food and customs. Due to Sicily’s proximity to Greece, a dear Greek man once told me (as I choked on the sweetness of the baklava he had just given me), that Sicilians were “just Greeks” who wanted to be Italians. May be a grain of truth in that.!

If you love this outrageously ethnic food, then I highly recommend this. It’s the kind of book I wish Zia Elena would have written and left to me!

If you grew up in an Italian family like I did, chances are you had Sunday Dinner  (at 1:00 PM) each week with your family. And, if you were lucky enough like I was, that included your extended family. Each week from when I was a child until well into my 20’s, we were all at my Nonna’s house every Sunday for dinner and it was ALWAYS  Sunday Sauce (If you are Italian and you aren’t eating Macaroni and a red sauce on Sunday, is it even Sunday? lol)

Maybe you are wondering about Sunday Gravy? Let me help settle the debate…it’s always Sauce and never Gravy (LOL). Italian Sauce vs Italian Gravy really depends on what it’s called in your Italian family. Another commonly used term you may have heard for the traditional Italian sauce is Sugo. 

This tradition, though I didn’t appreciate it at the time, was something that just isn’t possible in today’s world of activiti

es, sports, and other obligations.  Looking back now, it’s those family dinners became a big part of who I am. Whenever possible, l will have family dinner and make my Authentic Italian Sunday Sauce and try to keep the tradition going in some way.
